Daytona Beach Oyster Fest a Successful Fundraiser for Reefs

The first-ever Halifax Oyster Fest in Daytona Beach raised $25,000 — 100 percent of which will go towards oyster reef restoration in local waters.

Organizers said that more than 8,000 people attended the Daytona Beach event and more than 10,000 oysters were shucked (that's a lot of oysters).

The reef restoration will be accomplished by using a ton of those shells to rebuild the habitat. The Marine Discovery Center in New Smyrna Beach, which oversees the restoration, uses a technique pioneered by a University of Central Florida professor. The shells are tied onto mats which are laid in the waterways. The shells then provide the surface on which the next generation of oysters will grow.
